Personal files gone after having to perform reset due to April update

The April update really messed my laptop over and I couldn't do anything to get past the recovery screen since not a single option worked.

Couldn't get through to the desktop, the reset PC option wasn't even on the recovery screen anymore so things were just getting more frustrating and the more I dug into forums the less I knew what to do.

Even using the usb download tool really didn't get me anywhere since I kept running into problems at every step, and honestly I'm not entirely sure what I did do in the end that managed to get me to the reset option.

I understand in some cases it was the antivirus that created problems with the update, I have an AVG with the full protection purchased, and I have had issues with the update not wanting to download properly at first and having to go through troubleshooting it before it even worked for me. In the end after two days of trying to figure out what to do I just reset the laptop.

I haven't kept a whole lot of files that I didn't have copies of but there was a couple which I was hoping I'd be able to recover, since I used the reset option with keeping personal files, but none of them are anywhere to be found.

I tried windows.old but it looks like it only kept all the unnecessary data in program files (like settings etc. in folders leftover after my programs which got deleted) but none of the files I need from the documents, images, or downloads folders. I have tried a couple of different recommended recovery programs, could see the files I'm missing after doing deep scans, but for example in Piriform's Recuva it shows you if the files have been overwritten and as someone who's not very well phrased in computer related subjects, I don't understand why a file I'm looking for, a word document, now says it's in unrecoverable state and is overwritten by (insert path leading to a file in AVG or Netflix or Origin etc.)

The paths of the files I need lead to the Windows WinSxS folder and some .admx files but I have no idea what this means.

Does anyone know if I am even able to get those files back? It seems I can still see them, somewhere, but I can't figure out where they are and how to go about recovering them. It is honestly maybe 5 or 6 files in total, but if possible I'd like to try to get them back.
