Windows server 2016 2-Node s2d poor performance

I just set up a 2-node s2d cluster on server 2016 in a 2way mirror, and both my write and read speeds are terribly slow. I followed this guide here-

2-node hyperconverged cluster with Windows Server 2016

Each node has the following configuration-

1x mellanox connectx3 with both ports directly connected to the other node with the driver set to ethernet mode with roce configured

2x micron m600 128gb ssd's for cache

4x seagate constellation.2 500gb sataIII hdd's

The drives are connected by a perc h200 as the hba

Copies to the csv from local drive are 100mb tops and can be as low as 20-30mb/s. When i try copying a 2gb file from my file server vm to another vm's desktop i get around 3mb-10mb/s. I run around 12 or so vm's with not too many write intensive activities going on, and running windows updates take forever to download(my internet is quite fast, the hypervisors download the same updates in a fraction of the time)

I'm pretty new to this all so i'm not entirely sure on what I should be checking or fixing, and this is all a lab so my intention for it was to learn hyper convergence. Could really use some guidance on this as I really am not too sure what i'm doingm, but I'd like to learn
