Adding email to existing contact and deleting old email address

I am trying to put a new contacts email address to an existing contact and delete the old one but can't figure out how to do this. Can anyone help? I am using Windows Vista and my email is Window Live email. It seem like it should be a no brainer but when I highlight the old email to delete it, it justs puts the address in the To line and I can't even delete it. Help!! Thanks, Albear
