SMTP problem - emails disappearing without trace

The SMTP server on my two Server 2016 servers has been working fine for three years but at some unspecified time in the past few weeks, emails have stopped being delivered. There are no entries in the BadMail folder and no obvious error messages in the SMTP log. How do I diagnose this problem?
