Hi All

As our school (approx. 50 machines + 2 printers), uses a Win2k3 server for
file and printer sharing, would it benefit the network and/or client PC
performance if I unticked file & print sharing on the client PCs?

Yes, if you don't share those workstations.

All the questions you are asking are very basic questions - research
could answer them in less than 15 minutes.

Good lord, I hope you are NOT the administrator for your network.

OK, humour me.

If its basic then what do you think I should do?

Would it make a significant diff to network/pc performance?

Yes, it will help network/pc performance and secure the workstations.
