How do I logon and config my w2k3 server from my Vista client PC?

Can I go so far as to remove the keyboard, mouse and monitor? When
the server is booted up, would I config it to automatically login or
could the initial login be done from a client PC also.

There is no need to logon unless you need to do some administrative tasks.
The server will work just fine without anyone logged in, locally or
otherwise. You can also do quite a lot remotely without logging in, for
example, you can open Computer Management and connect it to the server to
view Event Logs, manage services etc. You can also connect remotely to the
administrative shares (e.g. c$) to view and manage folders and files.
