A few months ago I decided to get a monitor upgrade, from my 8 year year old AOC e2770Sh to a Samsung UR550. Definitely an improvement overall, but I noticed a little while ago that I was having a brand new issue since the swap happened. Images that I view with the Windows 10 Photos viewer app look oddly desaturated compared to what they used to. There are images I've known and looked at like a hundred times that look drastically different to what I'm used to. Any new screenshots I'm taking of my games are clearly desaturated, too.
