Setting an HP printer to print double sided as default in all programs

I am trying to find how I can set certain printer settings (such as double side) as the default for the printer when using all programs (Office, email, etc.)I've gone into Settings>Printers and Scanners, then chose my HP printer that is currently my default printer, then chose Manage. I've made the changes, then clicked Apply. There seems to be no "use as default" in the Preferences dialog box. While those preferences remain in the Printer Settings, it does not carry across to any programs that I use. Seems to be that I should be able to do this.Thanks, Carol
