OneDrive has removed all the documents and programs from my hard drive and moved them to OneDrive on Microsoft's server, how do I get them back?

My accounting software, labeling programs, and all my documents have been moved to the cloud, I tried downloading my files but that just moved everything to a "OneDrive folder" on my hard disc. I can't invoice my customers because my accounting software still thinks it's on OneDrive. How do I undo that and prevent them form ever doing it again?
