I administer a 12 node VMware cluster supporting numerous Windows virtual machines. When running a PC health check on a Windows 10 VM, the results are, The processor isn't currently supported for Windows 11. Processor: Intel Xeon Gold 6254 CPU @ 3.10 GHz. The same results are received when attempting to perform a Windows 10 to Windows 11 upgrade using an .iso file. Following the instructions in the message, selected More about supported CPUs link (Windows 11 System Requirements - Microsoft Support). Then selected list of approved CPU
