I was running windows 10 and do not want windows 11. is there any way to require an approval before installing even if the delay has expired?

I was running Windows 10 and do not want Windows 11. I travel for work, windows is now doing the update without my permission. even when I set the delay and the PC is in sleep mode if I travel for more than the delay set the PC would have updated to Windows 11 before I can delay the install again. this is ridiculous, this last trip was longer than the 10 days allowed to roll back and now I have to reformat and install Windows 10 again. Is there any way to require approval before installing even if the delay has expired? This is very frustrating, this is the 3rd time I have had to reformate. I
