How to keep Defender updates flowing if Windows Automatic Updates are turned off in group policy?

I'm configuring a computer to run in a remote observatory and need to prevent unexpected updates so I plan to disable Windows Automatic Updates in the Group Policy setting the policy Computer Configuration -> Administrative Templates -> Windows Components -> Windows Update -> Manage End User Experience to "disabled". Operators manually download and apply Windows update on a planned schedule.However, Defender is running and I wish to maintain the daily quick scans (although I will use Group Policy to have it run during the day vs. the default 02h00).I want to ensure that the Defend
