What all data will be lost when i downgrade from windows 11 to windows 10 using a flash drive

I want to downgrade my windows 11 to windows 10. For this, if I use a bootable pen-drive and install windows 10 in my primary partition that is the C Drive, then will I loose the data from my C, D and E drive partitions? I am aware about the windows.old folder thingy, but can I copy all the program files related folders from windows.old to the new windows 10 I installed and access my applications in windows 10?
