Windows 11; windows speech recognition not letting me set up headset

Hello. I have a 3.5 MM jack headset I am trying to set up with speech recognition. In sound settings I can confirm the headset both works and records audio clearly AND is set as my default input device. But when I go into time & language > SPEECH there is no option to set up my microphone. I was able to do it on windows 10; I used my partners usb device and was able to get it working also. I have no other windows 11 products to test it on but is this a windows 11 issue? Seems like a big step backwards. Any tips would he helpful
