Randoms Apps are Crashing

I have a custom build Windows 10 Pro computer and today my Adobe apps (that I use nearly every day without issue) all crashed and stopped opening. Then I went to restart and the mouse wouldn't click on the restart or shutdown buttons. I tried installing multiple diagnostics tools, and I couldn't click on any of the buttons in the installer windows. I've deleted all recently installed apps - except one that won't uninstall for some reason (Topaz Photo AI).I have no idea what's happening.
